California Lovin’

This next recipe has been one of my all-time favorites since I was little.  I haven’t always liked Mexican food, but I’ve always enjoyed American Mexican food… typically.  This casserole is a cheap, quick recipe, which tastes great and makes a large serving, meaning leftovers! This is probably one of the reasons I love it so much since I’m a poor, broke college student. California Casserole takes about 20 minutes to make and you can easily change it to fit your personal taste with the toppings you choose to add. Here’s the way I prepare it:

California Casserole


  • 1Lb. ground beef
  • 1 can Spanish Rice
  • 1/2 packet taco flavoring
  • 1 bag Fritos
  • Shredded lettuce
  • 1 bag Mexican cheese
  • 2 diced tomatoes
  • 1 avocado
  • Sour cream
  • Salsa

All you do is brown the hamburger meat in a large saucepan, add 1/2 a packet of taco seasoning and the can of Spanish rice. Once hamburger is cook through (there’s no more pink) turn stove to low and allow the meat to simmer while you dice the toppings. I created a small batch of guacamole, one of my favorite dips. Just mash up an avocado, stir in one or 2 diced roma tomatoes, and season with garlic salt, chili powder, a small, de-seeded jalapeno (finely diced). Finally, once the meat mixture has thickened up, put a pile of crushed Fritos on a plate, add the meat, and top with the flavors you like. Enjoy!
